What are Colin Bedford’s favorite restaurants?
Being a chef, it is hard to turn the switch off, so I like to go to restaurants to be inspired, learn and have a great meal. I think restaurants such as Per Se, Eleven Madison Park and Daniel are at the top of their game. It’s the level that they’re at, the execution, their standards — when you walk in there, it’s an experience. These guys are trailblazers in the respect that they bring certain aspects tableside. For instance, if you go to Daniel and order the duck, they’ll bring it out and press it at the table. When you walk in, there’s just a lot of those little things that make the difference between a good dining experience and an exceptional one, and they’re on it.
