What’s the best meal Colin Bedford has ever had?

It was at Eleven Madison Park. I had langoustines with apple soup and buttermilk snow. I had skate, lamb and lemon — I just remember the three key words. I’m not someone who goes and dines in all these fine-dining restaurants. I’m someone who has just kept my head down and has kept myself under the radar. I really do think the reason why it was such a memorable meal is because it was one of the first times that I had been into a restaurant of that caliber. I was almost like a deer in headlights to a degree. That was in 2009, but I still think that’s one of the best meals I’ve ever had.
