How does David Burke come up with his menus?
When I write a menu, depending on the concept, I start with the main courses. I design the basic main dishes and some of the appetizers first. Then I try to figure out what I will have from the main course that I can use elsewhere. For example, if I have salmon on the menu, what can I do with salmon belly? Can I do salmon tartare? If I’m going to have filet mignon on the menu, can I have carpaccio for an appetizer? We design a menu for the best utilization. We also design a menu that is exciting and unique, has a wow factor, and something that is going to be interesting to the consumer. The menu design is another fun part of being a chef because you start with a clean slab and then you start throwing all your experiences and ideas together and you come up with some really exciting stuff.
