What are David Burke’s favorite ingredients?
I like seasonal ingredients. At this time of year, it’s asparagus, morels, soft-shell crab. I happen to do a lot of lobster. I love great beef. I like zest from citrus. I like curry as an ingredient but not as a stew, just as a flavoring. I like mustard oil, another kind of secret ingredient that chefs use. I love black pepper on items, and grains of paradise is another spice that I use a lot that’s kind of a Middle Eastern pepper that’s used in making beer. I like to use orange instead of lemon a lot. And, of course, I like the product itself. I love duck; I like lamb; I like the meats and the fish. I like romaine lettuce; love great tomatoes; and I love cheese.
