What inspires David Burke?
It’s one of these businesses that is built on adrenaline, creativity, competition, ingredients — it’s the energy of the restaurant business. The opportunities in this particular business inspire me as well — although it’s changing very quickly. When you get to cook something that makes people happy, and you walk in a restaurant and you’ve got a full dining room, people are enjoying work, it’s a good feeling. When it’s good, it’s real good, and when you have a bad night, you have a bad night; but that’s the same as every business. But I think being able to create the way we have and to be able to cook in a city like New York for the last 30 years and keep up with the changes, it’s a good feeling.
