What’s the best meal David Burke has ever had?
I’ve had a lot, but I had a meal in 1987, in a city called Roanne at a restaurant called La Maison Troisgros. I was on my way home from spending three months in the southwest of France. This is considered one of the best restaurants in the world, and I ate lunch there. I sat by the window; it was a rainy day; it’s across the street from the train station and I was going home. It was almost Christmas, and I had a beautiful four- or five-course meal. I had these oysters and salmon with sorrel sauce. I had pigeon with cabbage and foie gras. I had a soufflé, crème brûlée made with jasmine tea, and half a bottle of white wine. I was in heaven. I remember sitting there, looking out the window at the rain, and I was just a young student, and just feeling the excitement of being a chef.
