For fish, depending on how it’s prepared, I think you’re safe with a white burgundy. Chassagne-Montrachet is going to have some body to it. It’s also going to have touches of butter, spice, lemon. It’ll hardly ever go wrong with any fish. If anything, champagne — you can never go wrong, from lobster to sashimi to grilled mahi mahi; it’s going to go well with all three.
