What does Frank Bonanno collect from his travels?

Knives are probably the one thing that I really collect. It’s mostly Japanese knives. Earlier in my career, I had a lot of German knives that I still have. But I think the last six or seven years have really been about Japanese knives and sushi knives. Masahiro has been a longtime favorite — every year I get a different piece from their collection to gift to each of the chefs I work with. I just got a set of Nenox that I love. I hate to use the word “sexy” to describe a knife, but the Nenox are sexy knives. That’s really the one cooking thing I collect.
