What are John T.A. Vanderslice’s favorite restaurants?
My favorite restaurant is 32 East in Delray Beach, Florida. I lived near the chef of the restaurant, James Beard Award-winning chef Nick Morfogen. He only cooks with the freshest ingredients and sources everything locally, so let’s just say he is a good person to know during hurricane season. I don’t want to emphasize only restaurants in our hotels, but La Pergola at the Waldorf’s Rome Cavalieri has this one fagottelli pasta dish that is almost like a little shell, and when you put it in your mouth, the sauce explodes from the pasta. Another favorite is Mama Maria in Boston. The veal saltimbocca is out of this world.
