How does Miranda Whitcomb Pontes come up with her menus?

At Frothy Monkey, I wrote the menu with the help of another woman, Natalie, who was in the kitchen. We came up with all of the sandwiches and salads ourselves, based on things that I like. At Burger Up, I let go of the reins some and I put in some ideas of what I would choose, such as a kale salad topped with salmon, but I like letting my chef’s have freedom, too.
