What are Neal Fraser’s favorite restaurants?
I’d say Blue Hill at Stone Barns. [I like] the whole 60-acre farm and that they grow almost all their ingredients on the premises; just the style of the food and how much attention to detail they take on everything from their event space, to their kitchen, to their root cellar to their vegetables and how they raise their turkeys and pigs and chickens on property. Just how they’re kind of doing on a macro-scale what most people are just kind of scratching at. They’re doing it at a very high level in a very big space. They’re managing 60 acres, where I think I’d have a hard time managing a raised bed.
