What was it like for Rajat Parr to open his restaurant RN74?
I opened it with Michael Mina, so he’s my partner in the restaurant. We wanted to do something unique, something fun and something eclectic. I have a great wine program and also comfortable and delicious food without being too fussy or too fancy. So that’s where the whole idea came from. Burgundy inspired it by the wines that came from the region, and that was my inspiration and my dream since 2000, so it finally happened in ’09. We have one in Seattle and one in San Francisco.
