Mitsui in Taipei, Taiwan, never disappoints. They prepare fish in such an honest and fresh way, and you can taste the integrity and really appreciate the sophistication in its simplicity. Another favorite of mine is One Harbour Road at Grand Hyatt Hong Kong. Its cuisine is delicate yet flavorful, and the service is refined. Overall, they’ve just done a really good job of creating a menu that fuses various tastes of Chinese cuisine.
