Dining Room at Blantyre executive chef Arnaud Cotar has been in the kitchen at the Forbes Travel Guide Five-Star hotel since 2000 — he was promoted from sous chef to executive chef in 2011 — but his culinary background started long before that. The French chef was born to a family of restaurateurs and started cooking at age 7. Cotar trained in France and has worked in London’s acclaimed Le Gavroche restaurant and at inns in the United Kingdom and France. The chef now runs the kitchen at the Berkshires restaurant, creating the classic cuisine for guests and locals.
