Pastry chef Elizabeth Lennon is responsible for the decadent desserts and buffets of sweets at Dining Room at Blantyre. Lennon joined the Blantyre team in 2005, after receiving an associate’s degree in baking and pastry from Johnson & Wales University in Rhode Island and working at Disney World in Orlando, where she baked rainbow bread and other treats and catered desserts for massive conferences. In addition to creating the delicate pastries and savory sorbets at the Berkshires restaurant, Lennon is always working on new additions to the well-known hot chocolate menu.
