The menu at Plume, the fine dining restaurant at The Jefferson, Washington, D.C., is comprised of multi-course tastings that change with the seasons. The prixe fixe menu is usually priced at $98 per person. You can expect to find items such as Chesapeake Bay Blue Crab Tea with Jumbo Lump Crab, Chili Oil Pearls, Black Sesame and Tomato and Beeswax Poached King Salmon with Tri Color Vichy Carrots, Bee Pollen Roe and a Green Carrot Sauce.
