Dining at Wish, located in the Hotel, is paradise. Avocado, watermelon, plantains, cilantro and ginger are used to perfectly accent everything on the menu, from ceviche and salad to fish, poultry and beef. The kitchen is careful to balance the familiar with the exotic so that the menu remains exciting. Because this is the land of the lean, you won’t find a cream sauce in sight. But the sauces are divine. Clean and light, brightened with citrus juices or vegetable purées, olive oil and herbs, they practically sparkle on the plate. There’s a house cocktail list in addition to an extensive international wine list.
