As the first West Coast venture for the highly acclaimed chef Jean-Georges Vongerichten, Jean-Georges Beverly Hills opened with much fanfare. Since June 2017, it’s quickly become the new must-have reservation to obtain with a “who’s who” dining scene.
You might catch a glance of the world-famous culinary giant in the dining room. But since Vongerichten has an empire of restaurants around the world to oversee, you’ll mostly likely meet the man who carries out his vision with precision — French executive chef Steve Benjamin, formerly of L'Atelier de Joël Robuchon in Las Vegas.
Decorated in bright white furnishings and calming kelly- and lime-green fauna accents, the restaurant has mastered fine-dining opulence with a laid-back, California-cool undertone. It’s no wonder the design is flawless — famed designer Pierre-Yves Rochon curated every last detail, down to the Bernardaud china with a chartreuse-colored trim.

- Rare in L.A.’s dining scene, the palatial dining room — appointed with luxurious white leather, gold metallic and oak touches — combined with cathedral-high ceilings sets the stage for evening to remember.
- Fans of Jean-Georges’ culinary style will be right at home. The menu is a greatest-hits compilation of favorite dishes found in his other restaurants, such as the ahi tuna ribbons tartare and black truffle pizza.
- Don’t miss a pre- or post-dinner cocktail on The Rooftop by JG, located on the 12th floor. Cozy up to the fireplace and take in the glittering views of Beverly Hills — it’s a magical moment.
- Jean-Georges Beverly Hills has one of the deepest vintage selections of bubbly in L.A. Beyond seven sparkling wines by the glass, there’s a three-page list of champagne, including rare finds, such as the 2006 Palmes d’Or in a pearl-encrusted black bottle.
- Speaking of exceptional collections, the restaurant’s Madeira (fortified Portuguese wine) menu is among the best in California. By the glass, you can enjoy the spirit from 1996, 1988, 1978, 1908, 1900 and even as old as 1875.
Things to Know
- If you’re leaving your car with the valet, ask him to show you to the restaurant’s front door, which is somewhat hidden. You don’t need to walk through the hotel to access Jean-Georges.
- There’s a private outdoor dining area in the back of the Beverly Hills restaurant that can seat a party of 20 comfortably. Glass doors separate the area from the main dining room.
- Make sure to reserve well in advance — especially because hotel guests have priority at this hot destination.
- When you’re searching for that perfect pairing or celebratory bottle, ask for the affable hotel wine director, Jordan Nova. His passion and knowledge are impressive.
The Food
- The L.A. restaurant reflects Jean-Georges’ signature French-meets-American cuisine. And because of the bountiful access to year-round local produce, dishes features the freshest seasonal ingredients, including seafood.
- As the hotel’s only restaurant, open for breakfast, lunch and dinner, it’s not just a fine-dining affair. There’s something for everyone, including croissants, burgers and caviar tastings.
- In the evening, the menu is also a broad spectrum of options divided into categories to suite every taste: caviar creations, raw (think ahi tuna tartare), pizzas, salads, fish, meat and sides.
- No dining experience is complete at a Jean-Georges restaurant without trying the toasted egg yolk with caviar, avocado carpaccio and wagyu beef tenderloin.
- The wine menu is outstanding with an impressive selection of international and California vintages.
The Decor
- Waldorf Astoria Beverly Hills’ signature restaurant feels like a stylish greenhouse with floor-to-ceiling windows, natural lighting, clean lines and green fauna sprinkled about.
- The overall design is 1960s Mad Men meets a pristine modern art museum.
- The 12-seat bar with four booths reflects the same theme as the dining room. With its frosted mirror-back bar and glistening bottles of premium liquor, it’s a hot spot for a date or informal business meetup.
- The patio — also bright and airy — is less formal with inviting white and celadon-green pillow-backed seating and live greenery.
- Don’t worry about getting too much sun or trying to vie for an umbrella-covered seat — the entire patio is ensconced with a polycarbonate roof, allowing in less-harsh, filtered sunlight.
