Joël Robuchon Singapore

VERIFIED LUXURY
Any conversation of the world’s best French chefs inevitably features Joël Robuchon, one of the most decorated culinary masterminds of modern times and the man behind Joël Robuchon Singapore, a modern French restaurant located within Hotel Michael at Singapore’s Resorts World Sentosa lifestyle complex. Here it’s easy to see what makes Robuchon’s global empire such a successful one.

Under the direction of executive chef Michael Michaelidis, Joël Robuchon Singapore serves an exquisite array of French cuisine every bit as luxurious as the setting in which it is savored. Designed by lauded interior design firm Pierre-Yves Rochon, the dining room is a plush pastiche of art deco-inspired appointments and dazzling décor that includes oversized Lalique vases, dazzling Italian crystal chandeliers and modern artwork.

Attached to the restaurant’s main seating area, a “winter garden” adds a unique touch of natural materials with its greenery-lined walls and central tree that stretches up towards a skylight.

Michaelidis' cuisine incorporates all the tasty tenets of Robuchon’s accomplished kitchen, using seasonal ingredients and serving such savory French classics as foie gras, roasted baby lamb rack, veal, seafood and much more. À la carte menus are available, though many opt for the menu appétit, which allows you to determine how many courses you have and to choose which dishes you’d like, or the indulgent degustation menu, which features more than 10 courses and takes over two hours to complete.

Things to Know
•“Bring your appetite” are the three words we’d use to describe the degustation menu, a veritable feast of French cuisine that sees more than 10 courses — cheeses, seafood, meats, vegetables, sweets — served over multiple hours.

•Whichever menu and number of courses you select, remember to save room for the fine-dining restaurant’s famous bread, cheese and sweets trolleys; in a word, they’re incredible.

•Appropriate to the fine-dining ambience, service at Joël Robuchon Singapore is friendly but formal, with members of the dining room staff sharply dressed in well-tailored business suits or stylish Oriental-style dresses.

•Wine service at the Singapore restaurant is just as helpful — don’t hesitate to ask for recommendations and tasting notes for any of the largely French pours on the list.
The Food
•Ideal for the indecisive patron, the seasonal les crustacés appetizer includes three different crustaceans done three ways: king crab with green curry, langoustine fricassee with zucchini and almonds, and lobster in a seafood bouillon.

•We love the flexibility of this Singapore restaurant’s “create your own menu,” which gives you the option of choosing how many courses you have and which dishes you’d like from a long list of appetizers, main selections and desserts.

•French cooking meets Southeast Asian fare in the refreshing les fruits, relatively light dessert featuring seasonal fruits with a Tahitian vanilla-flavored coulis.
