Following a 2019 redesign, the Hong Kong hotel’s signature restaurant Amber showcases fresh, light-filled interiors and curvaceous furniture guided by acclaimed New York designer Adam Tihany.
Culinary director and chef Richard Ekkebus has given the Five-Star contemporary French restaurant’s menu a bit of a makeover too, shifting its focus to modern dining using traditional French cooking techniques while cutting out diary and minimizing additives like sugar and salt. Ultra-fresh dishes might include Okinawa corn with Kristal Schrenki caviar, teardrop peas with pomelo and cuttlefish, or a refreshing dessert with avocado, lime, pistachio and granny smith apple.
Speakeasy-style PDT Hong Kong is a hot spot for evening tipples. A unique collaboration with popular New York spot PDT (Please Don’t Tell), this fresh 25-seat concept features a phone booth entrance, American comfort foods (such as chilli dogs and Okonomiyaki-style tater tots) and a list of creative cocktails.
