With plump, oversized fish sculptures floating above the dining room, a black octopus stretching its tentacles across a cherry-red wall and fish shadows dancing in small colorful spotlights on the floor, Resorts World Las Vegas’ Kusa Nori seems like a dimly lit hot spot for seafood. And it is — a sushi bar sits next to the octopus wall that prepares fresh sashimi, nigiri and specialty rolls, while the kitchen turns out dishes like eel with kabayaki sauce, sesame seeds and negi, as well as misoyaki black cod.

But Kusa Nori does much more. The modern Japanese restaurant near Conrad Las Vegas also cooks up yakitori, teppanyaki and robata meats. No matter what the protein is, Kusa Nori’s chefs ensure every dish has flavor and flair in its presentation. Take the shigoku oysters — they are topped with a shiso-sakura-shoyu mignonette, a dot of kusa cocktail sauce, pearls of golden ikura and edible gold flakes and arrive on ice in a shroud of smoke.

  • Witness a show at the teppanyaki grill. The dexterous chefs slice, dice, chop and do tricks while making a delicious meal. The lobster makes for an especially indulgent add-on.
  • The misoyaki black cod offers delightful tastes and textures: the tender seaweed-crusted fish is covered with arare (crunchy little cracker balls) and piles of yuzu-sake foam.
  • Be sure to order from the sizable sake list. We thoroughly enjoyed the Heavensake junmai daiginjo with our dinner.
  • The presentation is so lovely, you won’t want to muss your plate. Moriawase, a chef’s selection of sushi or sashimi, comes carefully composed with leaves, gingko nuts, lemon slices and pink pickled daikon rounds on a bed of ice. Even shrimp tempura gets a plate makeover — the crispy-rice-crusted shrimp sits atop a plate with wasabi honey aioli and citrusy kabosu gel in a hypnotizing circular pattern.
  • Whether you pick a roll like the Kusa Nora (wagyu tataki, lobster tempura, asparagus, yuzu emulsion, caviar, crispy garlic and truffle ponzu) the or the uni, the sushi bar will satisfy your taste buds.

Things to Know

  • The dress code at Kusa Nori is business casual. While polished shorts and more dressed-up sandals are permitted, hats, baseball caps, flip-flops, beach and athletic wear are not.
  • The best way to experience the fare at the Las Vegas restaurant is by ordering the omakase. The chefs will take the freshest seasonal ingredients and turn them into a six-course feast.
  • Ask for wasabi and your waiter will grate the root right at your table — it tastes far different from the powdered pastes most restaurants use.
