One might not expect to find fine gastronomic dining at an all-inclusive, but that’s exactly what guests will get when booking a table at the sophisticated yet playful Cocina de Autor at Grand Velas Los Cabos.

The tasting-menu-style restaurant redefines the art of vacation dining, effortlessly blending contemporary elegance with innovative flavors, over a leisurely eight to 10 courses. Helmed by acclaimed Dutch chef Sidney Schutte of De Librije in Amsterdam, Cocina de Autor takes diners on a tour of around-the-world flavors, inspired by Schutte’s time in Europe, Asia and more.

While the menu plays to global flavors, the focus is on innovative preparations using Mexican authenticity. For example, fresh local tuna is served in a unique “bubble” preparation and adorned with nori and piquillo pepper. Innovative libations pair well with each dish, from a gin martini with agave, lime and citrus bitters to a signature Mezcal cocktail infused with orange and habanero peppers.
