Known as the “King of White Truffles,” chef Umberto Bombana has long been considered a master of Italian cuisine. He first made his mark as executive chef of the now-shuttered Toscana at The Ritz-Carlton, Hong Kong before branching out on his own with the original 8½ Otto e Mezzo Bombana in Hong Kong. As gourmands fell in love with his refined style of Southern Italian cuisine, chef Bombana expanded his empire with locations in Shanghai and Macau.

Localized to complement its unique surroundings, each outpost is as elegant and inventive as the original. In Macau, the dining room can be found inside the glamorous Galaxy Macau, an integrated entertainment and resort complex.

  • This isn’t your typical Italian bistro. Instead of checkered tablecloths and jugs of house wine, 8½ Otto e Mezzo Bombana delivers a meticulous fine-dining experience that rivals the most sophisticated restaurants in Rome.
  • Upon entering the Macau restaurant, a marble bar serves as a convivial transition into the spacious main dining room. It seems every detail has been carefully planned, from the luxuriously thick napkins to the relaxing instrumental music.
  • Executive chef Riccardo La Perna helms the kitchen and ensures each dish balances tradition and experimentation.
  • The menu in Macau largely mirrors that of the original Hong Kong location and highlights fresh pastas — they are well prepared, seasoned and presented.
  • Bombana’s team treats every guest like royalty. You won’t want for anything, be it a sampling of rare fortified wine, an extra slice of bread or a custom cocktail prepared to your liking.

Things to Know

  • Otto e Mezzo means “eight and a half” in Italian, a reference to an acclaimed 1963 film of the same name from Bombana’s favorite Italian director Federico Fellini.
  • The smart-casual dress code means no slippers or hats. Men should also avoid sleeveless tops, shorts and open-toed shoes.
  • Traveling with children? Little ones 10 or older can join you for dinner. Otherwise, younger children will enjoy complimentary tickets to the Kids Club, where they'll be spoiled with educational activities.
  • Starting April 27, three- and four-course set lunch menus will be available every Saturday.

The Food

  • The Macau restaurant emphasizes excellent ingredients and simple but thoughtfully crafted preparations. Don’t miss dishes like the tuna tartare with caviar, pasta with sea urchins seasoned with Sicilian almond oil, and the cinnamon-and-rosemary steamed lobster served with its lemon-flavored consommé.

  • Save room for dessert. Heavenly options include a platter of hand-picked cheeses and a crispy layered millefoglie (“thousand leaves”) cake with mixed berries and Chantilly cream. Then there’s the decadent tiramisu, which is beautifully balanced with just the right amount of espresso, chocolate and mascarpone.
  • An impressive 60-plus-page wine list comprises a collection of hard-to-find Italian, French and New World labels. The expert sommeliers will guide you to the perfect pairing based on your dish selections.

The Design

  • At 8½ Otto e Mezzo BOMBANA’s Bar & Lounge, sit on sofas and chairs covered in tweed and pinstripes (meant to recall tailored Italian suits) under a stunning lighting fixture with colorful, glass-textured tubes of various shapes hanging from the mirrored ceiling.
  • Beautiful brass detailing, gold mirrors and vibrant blue and green fabrics decorate the elegant dining room.
  • The restaurant features paintings from Italian artist Gianluca Miniaci, as an homage to chef Bombana’s passion for the arts. The works depict the themes of love, life and passion.
