The focal point of the room is the 12-seat counter, manned by two chefs who prepare the meal before your eyes. The intimate setting ensures that you’ll receive personalized service and incredibly fresh cuisine. Sushi Mizumi is a testament to omakase, the Japanese art of putting your faith in the chef and allowing him to serve whatever is best, freshest and most flavorful that particular day.

The décor is predominantly white with a beautiful hinoki cypress wood counter, handmade ceramics and hand-cut glassware that all complement the incredible food rather than distract from it.

  • The intimate nature of Sushi Mizumi also means you have the chance to see the masters at work up close, so don’t be afraid to converse; while the chefs speak a modest amount of English, offering a few words of Japanese will likely enhance your experience.
  • The Macau restaurant is helmed by renowned chef Tsutomu Shimamiya, who has prepared sushi for presidents Clinton and Obama, among other high-profile guests. He also holds the title of contemporary master craftsman, the highest honor of artisan expertise awarded by the Japanese government.
  • The sake list at Wynn Palace’s signature sushi restaurant is shared with neighboring fine-dining eatery Mizumi and is one of the best in the region. The collection contains more than 70 varieties of the Japanese rice wine overseen by a dedicated sake sommelier.
  • Ingredients are flown in from various regions of Japan five times a week, so you can be sure to dine on the freshest seasonal fare outside of Tokyo.

Things to Know

  • The busiest times for the Wynn Palace eatery coincide with Macau’s high season — generally Chinese New Year, Chinese Golden Week in October and pretty much all of December. However, the restaurant is moderately busy most of the year, so reservations are recommended at least a week in advance.
  • Like parent restaurant Mizumi, Sushi Mizumi is closed every Wednesday.
  • While limited seating can make reservations more difficult to come by, it also means you can book out the entire restaurant for a small gathering if you do it far enough in advance.
  • The dress code at the Cotai Strip restaurant is casually elegant, meaning sleeveless shirts, open-toe shoes and baseball caps are not permitted.

The Food

  • Sushi Mizumi is renowned for the freshness and quality of its ingredients that are sourced directly from marketplaces in Japan. The produce, fish and rice are evaluated every day — if it’s not up to the chef’s standards, it doesn’t leave the kitchen.
  • The omakase menu can read a little ambiguous, but that’s because the dishes change almost daily depending on the seasonality and freshness of the ingredients. You might enjoy steamed Japanese abalone and octopus with sweet tare sauce, Hokkaido live sea urchin sashimi with lime jelly or a traditional soup made with char-grilled kinki fish and dashi.
  • The menu will change at least four times a year, but with the nature of omakase, the offerings are likely to be different almost every time you dine.
  • A selection of menu enhancements gives you the opportunity to add on to or tailor your omakase with additional pieces such as Hokkaido sea urchin and otoro tuna belly.

The Design

  • The beautiful hinoki cypress countertop is surrounded by a dozen comfortable bright red upholstered chairs on chromed steel legs from Soho Concept, drawing your eye to the center of the room and the action.
  • Authentic Japanese touches such as hand-spun pottery and carefully crafted crystal add to the restaurant’s refined ambiance.
  • The somewhat minimalist décor is punctuated by a beautiful mobile composed of gold and silver origami cranes that floats above the open kitchen and dining space.
