RIME Seafood & Steak is a paean to the best offerings from both sea and land. The new signature restaurant at The St. Regis Deer Valley features cuisine as exquisite as the views in a modern rustic setting with dramatic floor-to-ceiling windows overlooking the slopes of Deer Valley Resort.

The restaurant serves traditional American cuisine conceptualized by local chef Matthew Harris. Savor a seasonally inspired menu built on sustainably caught seafood like Rocky Mountain trout (other catch is flown in daily from Maine, Boston and Nantucket) and locally sourced meats, like wagyu beef from Snake River Ranch in Wyoming and Delta elk from Utah.

  • Food and cooking aficionados should opt for one of the seats lining the exhibition kitchen to watch the chefs in action, and perhaps be awarded with samples of appetizers or a dessert.
  • The large dual-sided stone fireplace creates just the ambiance to start the day before hitting the slopes or, at afternoon's end, to cozy up with an indulgent cocktail, such as the Toasty Slopes (Waterpocket Cocoa & Rum, Licor 43, hot chocolate, whipped cream and cocoa shavings).
  • Ask to sit next to the oversized windows that overlook the snow-covered mountains and aspen trees — inspiration arrives with every entrée.
  • Enjoy RIME's dinner menu in the intimate and convivial Wine Vault and ask to be seated on one of the light gray crescent-shaped banquettes. Enjoy your pour from the 10,000-bottle collection that features 1,200 labels.
  • Don’t miss the unique Fossil Wall that greets you upon entering the Park City steakhouse.

  • When the weather allows for alfresco dining, the Mountain Terrace offers a lunch grab-and-go café, as well as an après-ski caviar and raw bar. Warm up by the spectacular Fire Garden.
  • The St. Regis Bar & Lounge, with its dramatic murals paying homage to Park City’s rich mining history, is one of the most popular après-ski destinations in town. Enjoy lite bites from the bar menu or sip handcrafted cocktails, including the 7452 Bloody Mary, named for the elevation of the resort.

The Food

  • Dinnertime appetizer favorites include roasted oysters with sourdough, hot sauce and fried ham, as well as beet-cured salmon crackers with dill, crispy capers, cream cheese and roe.
  • Tuck into entrées like lobster pan roast with chorizo, aged sherry, fennel and saffron, or short rib rigatoni bourguignon with local mushrooms and smoked Parmesan.
  • Lunch offerings include the Desert Mountain Ranch cheeseburger with a buttered bun, truffle mayo, white cheddar and pickle as well as a buttery Maine lobster roll with lemon and Old Bay fries.
  • At breakfast, order the grilled avocado toast — you can add on smoked salmon or a sunny-side egg — or a crab cake Benedict.

The Drinks

  • A repeat recipient of Wine Spectator’s Best of Award of Excellence, the Wine Vault has a diverse collection from all major wine regions, with 10,000 bottles and 1,200 labels.
  • Selections from the Wine Vault can be enjoyed while dining at RIME Seafood & Steak, the Wine Vault, Brasserie 7452, St. Regis Bar & Lounge and the Mountain Terrace.
  • Order the 7452 Bloody Mary at the St. Regis Bar & Lounge. This one-of-a-kind Bloody Mary features oat-distilled Vodka 7000’ from local High West Distillery, a foamy wasabi and celery espuma (celery and green apple juices, lime, wasabi powder, salt, Xantana) and a sprinkle of cayenne pepper.
  • Try The St. Regis Barrel Select Gin for any gin-based libation. Available exclusively at the resort, the gin created with local Alpine Distilling has a bold juniper-forward and floral profile. It’s a great finish to a day on the slopes or in the spa.
