One of France’s most-decorated chefs, Anne-Sophie Pic has expanded her La Dame de Pic empire from Paris and London to Singapore. The chef rose to fame for Maison Pic, the flagship restaurant established by her culinary-minded family in Valence, France, in 1889, and she opened numerous eateries since then in Europe, but this marks her debut in Asia.

At La Dame de Pic, Raffles Singapore, the master of comestibles crafts chiefly French fine dining, but utilizes local flavors and sources the best fish and meat from France, Wales and Japan.

Although La Dame De Pic launched at the hotel in 2019, the space retains a typically Raffles-style décor and appearance, being minimal and yet luxuriously furnished: there’s a white and mirrored interior with gold accents, fresh flowers, herringbone wood floors, plush curved banquettes and leather chairs.

  • A mainstay on the tasting menus is Pic’s signature dish, les berlingots. It’s composed of green pasta pyramids filled with smoked cheese fondue in a mushroom consommé with galangal and roasted barley.
  • The chef’s skill with seafood is known worldwide. You can taste it in dishes like the blue lobsters cooked over coals and John Dory fillet, both flown in fresh from Brittany.
  • The multicourse meals aren’t only for seafood and meat lovers. The vegetarian tasting menu includes item like different textures of organic leek and coriander with pistachio pesto, and a kabocha pumpkin tart.
  • If you can’t snag a seat for dinner or don’t have the time for the full tasting menu, opt to come for lunch, where you’ll savor three courses of Pic’s mastery.
  • Aside making sure her dishes taste delicious and nuanced, Pic plays with colors, shapes and textures throughout her tasting menus.

The Drinks

  • The tasting menus can be paired with wine and sake or non-alcoholic beverages.
  • The wines primarily come from the Rhone Valley, in homage to Pic’s birthplace. Though you can find pours from different French regions and other parts of the world. The options are extensive and carefully chosen by the chef herself.
  • The Singapore restaurant menu includes Pic’s own collaboration with Rhone Valley winemaker M Chapoutier and her own label of gin by Audemus Spirits in Cognac.
  • A selection of interesting cocktails features rare teas, flowers and fresh fruits.
