At Le Chique in Azul Sensatori by Karisma, food is entertainment thanks to chef Jonatán Gómez Luna. For example, take the intriguing Scotch Brite dessert, named after the green and yellow dish sponge. Gómez Luna employs liquid nitrogen to create a mint-and-pineapple rectangle “sponge” and plates it to look like it’s cleaning up a spilled glass of bubbly.
Foodies flock to Ramona at Nizuc Resort & Spa for the restaurant’s “trilogy plate” of ceviches: lobster and cilantro; shrimp with coconut and mint; and crispy octopus.
