The Rugby Grille is located at 100 Townsend Street, inside the luxury Townsend Hotel in Birmingham, Michigan, a suburb of Detroit. The restaurant just completed a revamp of its interior design spearheaded by architect Victor Saroki, FAIA, of Victor Saroki & Associates in Birmingham and Daniel Clancy, ASID, of Perlmutter-Freiwald Inc. Interior Design in Franklin, Michigan, in late March 2013. But the menu received a makeover, too: New executive chef Drew Sayes updated the offerings to reflect his focus on local, sustainable foods. You’ll still find popular dishes from the original menu, including the hydro Bibb lettuce salad and the Dover sole. But now you’ll also be able to choose from new items, including Scottish salmon with cauliflower puree, beets and arugula pistou; citrus-cured arctic char alongside leeks, Romanesco and pumpernickel crisps; and duck breast with choucroute, confit croquette and burnt orange gastrique.
