    Castle Hotel & Spa has one main restaurant called Equus. Take a seat at one of the white-linen-covered tables and savor a delicious meal at this Auberge-style French restaurant located on the first floor of the hotel. The restaurant serves a changing seasonal menu that offers traditional Provençal cuisine, but made with all locally sourced greens, fruits, meats and cheeses. This includes celery root soup with crisp apples, Montauk Point skate wing with gooseberries, Hudson Valley chicken with apricot and pistachio, and warm Valrhona chocolate cake. You can get these dishes or try the restaurant’s prix fixe tasting menu, a five-course meal that comes with an appetizer, fish, meat, and two desserts.

    Aside from the delicious food, unique décor and calming atmosphere, Equus also offers a choice of rooms from the historical Oak Room where the founding owners used to dine, to the laid-back General’s bar and Tapestry Lounge, to the Garden Room, a space that overlooks the foliage with the Hudson River in the background. During the warmer months, outdoor seating on the thick stone patio across from the latter room is also available.     Since there are so many outdoor events, festivals and activities such as hiking, kayaking and swimming in the warmer months, spring, summer and fall in Tarrytown are the best times to visit Castle Hotel & Spa. Though, this is the peak season for the hotel, if you want to stay at the property on a weekend during these seasons, you should book far in advance. Or, come in the winter when the hotel remains less busy, and you can look out of your tower window at a world coated in snow. Plus, even if it’s cold out, there are plenty of things to do such as curling up next to the in-room fireplace, taking a drive to one of the nearby wineries, and watching the winter light play off the river.

    You can find Grand Cascades Lodge in the Crystal Springs Resort, located in northern New Jersey, in Hamburg near Vernon Township. Luckily for guests, this sprawling resort is only 70 to 90 minutes away from New York City by car, and just an hour outside of Jersey City. The best way to get to Grand Cascades Lodge is to take Highway 94 to Hamburg and you will find yourself inside the resort.     The highlight of dining at Grand Cascades Lodge at Crystal Springs Resort can be found at the upscale eatery Restaurant Latour. Here, chef Timothy Fischer focuses on cooking New American cuisine with local ingredients, and he sources a lot of the restaurant’s produce from the property's own nearby farm, making it truly a farm-to-table experience. The space is on the top floor, so you can enjoy the view while indulging in the restaurant’s three-course tasting menu, or even better, the chef’s tasting. The latter includes dishes that highlight one ingredient, for example on a recent menu, the crab section featured Chesapeake Bay soft-shell crabs with micro tatsoi, the veal portion was short loin with chanterelle mushrooms, and dessert came under the moniker “cherries,” which included a Bing cherry semifreddo and a brown butter financier topped with macerated cherry compote. With the meal, utilize the knowledge of sommelier Susanne Lerescu to pair each dish with a vintage from the epic, 135,000-plus bottle wine cellar.

    Also to note, though it’s not a part of Restaurant Latour, if you are staying in the hotel you must stop by the café near the Biosphere pool complex. It serves fresh, housemade gelato in a variety of tasty flavors, plus, you can get it blended into a boozy shake for a real poolside treat. Grand Cascades Lodge also offers contemporary American spot Crystal Tavern, as well as the Italian-themed Springs Bistro.
