If you’re in the mood for some serious Italian cuisine, then FiAmma at MGM Grand is the place to be. It’s home to chef Pierpaolo Pittia, who offers up an impressive menu of updated classics, including housemade pastas cooked in a wood-burning oven. Although the menu regularly changes and features seasonal specials and updates, here are a few of our favorite bites:
1. Raviolini. The specialty at this Italian house is fresh pasta, and raviolini is a signature dish we can’t help but recommend. These raviolis come stuffed with tender short ribs, served in a rich creamy black truffle sauce, splashed with a Barbera wine reduction and sprinkled with percorina romano cheese for a taste of Italian cuisine you won’t want to miss.
2.Branzino. If seafood is your go-to option, branzino is another signature FiAmma dish that is a keeper. This grilled Mediterranean sea bass is served with porcini mushrooms and potato “sugo,” making for a light, but filling course perfect for sharing between two.
3. Maine Lobster Gnocchi. For a perfect pairing of Pittia’s housemade pasta and artistically executed seafood plates, try the savory Maine lobster gnocchi. These soft potato dumplings share space with tender puffs of lobster meat in a dish you won’t want to share.
4. Brasato. If you don’t want to overload on the carbs, Pittia also offers a range of seafood and meat options at FiAmma. Brasato is the Piemontese-style braised beef short rib, a tender and rich dish that will make any meat lover happy.
5. Crocchette. You’d be remiss to leave this Forbes Travel Guide recommended trattoria without a taste of the sweetly simple crocchette. These traditional Italian doughnuts are made with an amaretto and ricotta dough, and come alongside a variety of dipping sauces.
