Allegro, the fine-dining Italian restaurant in Wynn Las Vegas, does offer wine pairings on a specialty dining experience called the Chef’s Tasting Menu. You can order two courses for $70 or four courses for $80. Sommelier Marc Irving’s wine pairings can be added for an additional cost. A first course of pizza, calamari and meatballs was paired is Elk Cove Pinot Gris (2010) from Willamette Valley, Oregon. The family-style pasta and risotto pescatora course might be paired with Stag’s Leap Chardonnay (2009) from Napa Valley. The third course is a bone-in rib-eye and roasted pink snapper paired with Daou Celestus Syrah/Cabernet Sauvignon Blend (2008) from Paso Robles. Irving pairs the desserts with the traditional Italian liqueur limoncello.
