The chef at La Cave is William DeMarco. DeMarco comes from a restaurant family in New York, and studied at the Florida Culinary Institute. He also served as executive chef of The Buffet at Wynn before coming to the La Cave kitchen. At La Cave he created a menu inspired by flavors from around the world, but in American applications, such as flatbreads, small plates and charcuterie. Through his training and experience, DeMarco takes a simple approach to the nuances of American cuisine; he’s creative while keeping the sentiment of the dish the same.
