La Cave’s small-plates menus is the brainchild of William DeMarco, who was once the executive chef of the prized Buffet at Wynn Las Vegas. For a chef of his caliber, it must be a great step from working in such high volume to being able to create small, personalized plates for guests. The New York native attended the Florida Culinary Institute, but also comes from a family that has a popular pizzeria in New York. DeMarco’s contemporary American menu features charcuterie made in-house, wood-fired flatbreads and cuisine meant to be shared among good friends.
