Hush is the full-service restaurant at The Mosaic Hotel Beverly Hills. It received that name because when A-listers come to stay, onlookers remain “hush.” Dine either in the mosaic-accented dining room or alfresco in a poolside cabana. During the day, the sun shines brightly through floor-to-ceiling glass windows as you nosh on blueberry pancakes for breakfast or the Mosaic burger piled with Swiss or cheddar, spring greens, tomato, charred red onion and butter pickles for lunch. At dinner, warm candlelight bathes the surroundings while you dine on signature dishes such as Guinness-braised short ribs and almond-and-walnut-crusted salmon.

You can order a drink from Hush’s bar any time of day. Either pull up a chair and chat with the bartender, or enjoy drinks such as the Mosaic Mule (Blue Ice vodka, ginger beer, fresh lime juice) or California Collins (Grey Goose Citron vodka, fresh grapefruit juice topped with soda water) poolside.
