The Japanese-inspired restaurant offers an abundance of vegetarian and vegan-friendly choices such as miss tofu soup, seaweed and cucumber salad tossed in sweet rice vinegar, and edam me dumplings in a mushroom-mirin broth. Heartier vegetarian offerings include tofu and vegetables in a sweet-and-spicy ginger glaze and a warm spinach and mushroom salad. Koi also offers tempura-fried vegetables as a side dish, but there’s nothing wrong with making them into a main meal; choose among battered yam, asparagus and eggplant.
