Already home to a handful of popular dining venues, The St. Regis Deer Valley debuted a new star in its constellation of culinary outlets in 2023 with La Stellina. “Little star” in Italian, the restaurant shines bright with a collection of Mediterranean favorites inspired by recipes passed down through generations of Italian cesarines (home cooks) under whom chef-consultant Matt Harris studied.

At La Stellina, housemade dough is rolled perfectly thin and topped with Alpine-sourced ingredients for a local spin on traditional pizza. Hand-rolled pasta anchors dishes piled high with fresh clams, meaty bolognese or spicy all’Amatriciana. And individually fried cannoli shells stuffed with sweetened ricotta serve as a decadently authentic dessert.

  • No true Italian feast is complete without a glass or three of wine. Luckily, La Stellina enjoys access to The St. Regis Deer Valley’s Wine Vault and its extensive 10,000-bottle collection.
  • Touches of authenticity can be found in the details of La Stellina’s menu. Carbonara is made with guanciale instead of pancetta and specialty pastas like squid ink linguini are sourced from established family-run specialty food shop Borgatti’s in the Bronx.
  • Carnivores will be very happy with the secondi selections at La Stellina. Niman Ranch veal osso bucco, Florentine-style steak for two and a hearty fennel- and apple-stuffed porchetta all grace the menu.
  • While the menu is certainly meat-heavy, seafood and veggie-forward selections are not after-thoughts. Rich pumpkin risotto, fresh arugula- and mozzarella-topped pizza, and classic eggplant parmesan provide a mouthwatering alternative to meaty mains.
  • Wash down your fabulous feast with an Italian-inspired cocktail. Signatures like the Venetian Spritz or La Stellina Negroni add an extra dose of Mediterranean flavor to your meal.

The Chef

  • Chef Matt Harris got his start in Atlanta under the tutelage of decorated chefs Kevin Rathbun and Pano Karatassos.
  • After stints at acclaimed Atlanta establishments like Market by Jean-Georges, Harris packed up and moved to Park City, where he helped to open The St. Regis Bar at The St. Regis Deer Valley.
  • In 2015, the talented toque debuted his own signature restaurant, Tupelo Park City. The venue has earned critical and local acclaim for its Southern-inspired fare elevated with global flavors inspired by Harris’ travels.
  • After successfully debuting The St. Regis Deer Valley’s slew of on-site eateries, the chef took the reins of La Stellina. In preparation for the restaurant’s launch, Harris traveled extensively throughout Italy, training with local home cooks to get a taste of authentic Italian cuisine.
  • Ever the outdoorsman, the Park City transplant spends his off-hours summiting peaks (Mount Rainier, Mount Hood and Ecuador’s Cotopaxi, to name a few) and skiing, of course.
