The founding chef of 8 ½ Otto e Mezzo is Umberto Bombana, whose philosophy is shared by the Shanghai restaurant’s executive chef Alan Yu. Bombana’s menu is based on “produce driven cuisine” and dishes employ the best ingredients available, both imported and local. There’s an emphasis on maintaining the original flavor of the primary ingredient in each dish, whether it is tajima steak or fresh scallops. Bombana is also known as the “King of White Truffles” and he is liberal in his use of the delicacy. The restaurant’s name also serves as a clue to Bombana’s philosophy. It’s a tribute to Federico Fellini’s 1963 film 8 ½ celebrating the Italian lifestyle, art and philosophy.
