The menu at 8 ½ Otto e Mezzo BOMBANA Shanghai is resolutely and proudly Italian, both in ingredients and flavors. Founding chef Umberto Bombana builds his menu on Italian classics—breads and pastas, suckling pig and lamb, plenty of truffles and aged Italian cheeses, and tiramisu (deconstructed, naturally). His classic dishes include Milanese-style veal cutlet and trenette pasta with red tuna and bottarga eggs. Bombana is also known as the “King of White Truffles” for his liberal use of the delicacy. Indeed, they are far from stingy with this expensive product; your pasta or risotto will come covered with a thick blanket of truffle shavings.
