Executive chef Julie Donohoe updates the CHAR Bar & Grill menu when she finds a new product on the market she is interested in trying. The chef will usually add a seasonal item as a special to see how popular it is with diners before she adds it to the regular menu. Donohoe puts a strong emphasis on the provenance and quality of all the ingredients at CHAR. For example, she uses an organic chicken from China that she found after numerous taste tests. The restaurant sources its beef from the best purveyors in the world, including Australia’s award-winning Blackmore’s Wagyu Beef, and Cape Grim Tasmanian Natural Beef.
