Pelham’s is Waldorf Astoria Shanghai on the Bund’s Western fine dining restaurant, and like the Five-Star hotel, the service at the restaurant is impeccable. Lunch is a quieter affair than dinner, and you’ll find the maìtre d’ and hostess working the floor. Though the hotel is sizeable — it has 237 rooms, two buildings and a slew of public areas — Pelham’s feels intimate, with seats for 50 and 12 more chairs in the private dining area. The cozy atmosphere is furthered by personalized attention from the wait staff and even the French head chefs, who are known to come out of the kitchen and chat with diners. The maìtre d’ presents each course, explains the dish’s elements and answers any questions. If you have concerns (e.g. allergies or diet restrictions), be sure to let him know before you place your order. More servers descend on the floor during the restaurant’s dinner service; all are knowledgeable, unobtrusive and available to answer questions you may have.
