Maìtre d’ extraordinaire Max Chong is also the sommelier at Pelham’s inside the Waldorf Astoria Shanghai on the Bund. Chong is from Kuala Lumpur, Malaysia, and he has been in Shanghai since 2011. Before moving to China, he took a number of wine courses and examinations that led him to an advanced certification from London’s Wine & Spirit Education Trust. He has also participated in a handful of competitions. In 2009, Chong was crowned Malaysia’s top sommelier, and in the same year, he ranked as a semi-finalist at a wine competition in Osaka. Although Pelham’s doesn’t have a wine pairings menu, Chong will be happy to arrange a pairing for guests who want to take full advantage of Pelham’s extensive wine menu.
