Chef Nick Jin is Shanghainese and has been at Roosevelt Prime Steakhouse for five years. Before joining Roosevelt, chef Jin worked at the Holiday Inn, a now-defunct bistro in the Xintiandi shopping complex, and a handful of local restaurants. Jin graduated from local hospitality school Zhongshi Vocational School and has always liked cooking Western food — he started off with Italian dishes 10 years ago and has been whipping up phenomenal steaks ever since. Roosevelt Prime Steakhouse is very much a traditional American steakhouse, so it’s even more impressive that chef Jin and his Chinese team turn out such perfect renditions of American classics. Tuck into a tender, crispy-edged New York strip sirloin, a ramekin of bacon creamed spinach or a bowl of creamy, rich black truffle macaroni and cheese, and you’ll have a hard time believing a local Chinese chef is behind all three.
