Far and away, the best place to sit at Sushi Oyama is at one of the coveted seats at the central sushi bar. From there, you can watch chef Takeo Oyama deftly slice, form and assemble an array of sushi like the pro that he is. It’s a pleasure to have that interaction with the chef, as he’ll happily explain each course to you in minute detail, from where your slice of tuna is from to how the fatty marbling affects flavor. It’s basically the equivalent of getting a seat at the chef’s table and will give you a chance to witness how your miraculously tasty slices of sushi are made.
