Takeo Oyama, a Hiroshima native who studied the art of sushi in Tokyo before making his way to Shanghai, is the chef and owner of Sushi Oyama. Just 34 years old at the time of this writing, he’s actually quite young to be a head sushi chef. Sushi chefs spend years just learning how to cut different grains of fish, let alone how to store them and tell which has the best flavor. In that, Oyama is something of a prodigy as his restaurant and food both seem to be works of someone with much more experience.
