There is no specially designated pastry chef at Sushi Oyama, as the desserts here do not take center stage during a meal. The small selection of sweets that do make an appearance at the end of a meal at Sushi Oyama are created by chef Takeo Oyama and his small team. Desserts are simple and light, a perfect way to ease diners to the end of a long 10-course omakase journey without overloading their senses. Oyama’s desserts are generally cooling, like an almond pudding or Italian-inspired panna cotta with caramel cream.
