T8 Restaurant & Bar sits inside one of Shanghai’s traditional shikumen stone-gate houses, but its historic home isn’t the only reason to visit the Xintiandi neighborhood hot spot. Executive chef Jordi Servalls Bonilla uses is his Catalan background and molecular gastronomy expertise to craft modern European fare, like the Watermelon Salad 2.0 — goat cheese, watermelon cru, pickled shallot, blueberry, shaved fennel and a watermelon gazpacho shot.
