Jordi Servalls Bonilla, who is the executive chef at T8 Restaurant & Bar, is also the pastry chef. He works together with a local pastry sous chef to create the unique dessert menu, which includes remarkable desserts employing molecular gastronomy techniques. One of chef Bonilla’s most innovative desserts is the whimsical Magic Mushroom Patch, a delightful combination of crispy meringue, chocolate parfait and caramel that comes together in a work of art replicating soil, snow, leaves and black truffle. Another unique offering is Bonilla’s take on tiramisu, called T-8ramisu, which is served with Kahlua-scented coffee foam.
