There isn’t a separate pastry chef at Yamazato. The sweets that come at the end of the meal are the brainchild of executive chef Akira Kimura and are generally very simple and light. For the seasonal desserts, Kimura will have an ice cream on offer in flavors like vanilla or matcha. He will also end you meal with a light pudding and perhaps a couple pieces of perfect fruit, like red glistening strawberries or cantaloupe — that’s all. The desserts at Yamazato are just a quiet denouement to the meal, which are meant to end with a whisper instead of a bang.
