You won’t receive any special gifts from the chef on a typical night at Delfinos. However, you will find executive chef Steve Schoembs walking around the restaurant chatting with guests. The best part of his job, he told us, is hearing directly from diners about what they like and don’t like. That way he can make menu adjustments and consider new creations on a seasonal basis. On occasion, Schoembs will send out an amuse-bouche of a dish he’d like to add to the menu to get feedback. Most often, you’ll find him chatting with diners and guests and creating specialty dishes for them based on preferences and mood.
