The desserts at Element 47 in Aspen are divine, based on classic American flavors and French techniques. This is one restaurant where you absolutely want to save room for a sweet treat after your meal. Desserts may vary seasonally, as executive pastry chef Danielle Riesz likes to use only the freshest ingredients in her creative confections. For a lighter dessert, consider the coconut and passion fruit sorbet pairing or the old-fashioned float with housemade root beer and vanilla ice cream and sassafras bark. Housemade apple cider doughnuts with apple jam and crème fraîche are excellent, and the peanut butter s’mores cheesecake with a side of Concord grape also comes highly five star. If you prefer to drink your dessert, opt for the flight of three dessert wines.
